This is a twist on the Tik Tok viral Feta and Tomato Pasta, instead of Feta this features Goat Cheese, why? Because its all I had. This pairs beautifully with my Sous Vide Chicken Breasts on my Sous Vide Creations Page. This is a great item to meal prep for the week and so easy- featuring all key macros and flavor, you should already be sold. Get away from the boring white rice and chicken and try to flavor up that gains game.

- 4 oz Goat Cheese
- 1 Pack Cherry Tomatoes
- Spinach (I used whole pack with meal prep)
- 1/2 Pack Whole Wheat Bow Tie Pasta (any will do)
- 5 Cloves of Garlic (chopped coarsely)
- 3-6 tbs Olive Oil
- Seasoning: 2 tbs Italian Blend, salt/pepper, a few sprigs of any fresh herbs on hand
- 2 Chicken Breasts, see Sous Vide Chicken Breast in Sous Vide Creations

Preheat oven to 375.
Drizzle a baking dish with olive oil, place the goat cheese in the middle, toss in cherry tomatoes, add seasoning and fresh herbs (I had rosemary), add garlic, and drizzle the top with more olive oil. Bake for 40 minutes. While baking prep the pasta, cook according to instructions, drain (do not rinse). Add the hot pasta in with an ample amount of spinach, stir, this will cook the spinach. While the sauce bakes, continue to shake the pasta to prevent sticking.
Once the sauce is done, crush the tomatoes (see below) but do so carefully as they will spew hot tomato guts. Gradually start to mix the cheese in with the guts, and a sauce will begin to form.
Add the sauce to the bowl with the pasta and spinach, stir to combine. The spinach will end up cooking completely through. Spinach condenses down to nothing so I used that entire pack (see below for meal prep guidance).
